Weekend Eats 3-4-13

No time to mess around today. Let’s get to it!

Friday night, on our drive to North Carolina, Greg and I stopped at Chick-Fil-A. While I almost always get the Southwest Chargrilled Salad, I wasn’t feeling it that night. Instead, I got the Spicy Chicken Cool Wrap with fruit on the side and a diet lemonade. It was perfect.

I had the same breakfast both days this weekend – quick cooking oats mixed with cinnamon, a tablespoon of creamy peanut butter and a sprinkle of chopped pecans. Sliced apple on the side.

Again, perfect. 
On Saturday night, we went out to dinner with Greg’s parents. I got a salad and was sure glad I did, because I did not feel the least bit guilty eating the most delicious frozen yogurt concoction….ever!?!? Yes. I think so.

Sooo, I ate half before I took the picture. I couldn’t help myself. In the bowl was a mix of dark chocolate, vanilla, and chocolate chip cookie frozen yogurt. Then I topped it with peanut butter cups, M&M’s, whipped cream, caramel sauce and walnuts. I normally top my yogurt mostly with fruit and avoid many of the candies. I let myself go a little bit this time and couldn’t be happier with the outcome. Seriously, I couldn’t get over how good it was. 
My weekend ended with a healthy serving of sauteed sweet potato and veggies topped with goat cheese, and a toasted english muffin with a thick spread of mashed avocado.

It was a pretty delicious weekend if I do say so myself.

Weekend Eats 12-17-12

We are so close to Christmas/vacation time that this particular Monday morning doesn’t feel too bad at all! All weekend I found myself saying things like, “This is the last Friday night we’re in Charleston until after Christmas!” and, “This is the last Saturday we’re in Charleston until after Christmas!” and, “This is the last Sunday….” 

Okay, you get it. 
I’m excited. Can you blame me? I know you are too, right?! 
I kicked off the weekend by cooking a pot of my Tempeh and Bean Chili, with a few modifications. I subbed black beans for the red kidney beans, skipped the garlic, and used a can of diced tomatoes with chili peppers rather than using tomato sauce. 
 I love this stuff. It’s so filling and full of nutrients, not to mention just plain delicious. Win win win!
On Saturday, Greg and I spend most of the late morning and afternoon running errands. It wasn’t too long before we were ready to refuel and grabbed lunch from Chick Fil A. 
I got the Southwest Chargrilled Salad with Berry Balsamic Vinaigrette dressing…surprise, surprise. 
Gorgeous. 
Saturday night was spent at my company holiday party at an art museum downtown. We had a great time. I sipped on wine while eating a mini roll with turkey and cranberry sauce and a pork slider on a delicious little biscuit. There was also a do-it-yourself mashed potato bar. Think: Menchie’s (or any other self-serve frozen yogurt place), but for mashed potatoes. Toppings included gravy, shredded cheese, chives, sour cream, sauteed mushrooms, etc. So fun! 
I spent Sunday creating a few different holiday treats. I’ll be sharing those in more detail later this week, but here’s a preview…
Finally, Greg made venison patties for dinner with meat one of his clients gave him (just like last year). 
I feel so adventurous when I eat venison. Kind of like a cave woman too. Regardless, it’s pretty good. And even though I had already eaten more meat over the weekend than I normally like to, Greg made a point that it’s lean and just about as organic as you can get. 
Okay, fine. 😉

Weekend Eats 11-12-12

That coffee is looking awfully good this morning. I thought I had been coping well with my new sleep (or lack thereof) schedule with the puppy. We are up every couple of hours throughout the night to let her outside and last week I really didn’t have too much trouble. All of a sudden it’s hit me and this morning I’m not quite sure I can make it through the day without crashing. I’ll have to trust a big cup of coffee more than ever to keep me going through the work day. 
I spent Thursday through Saturday in Jacksonville, Florida at a conference for work and took advantage of the opportunity to sleep straight through the night. It was nice while it lasted, but there’s still no place like home 🙂
While in Jacksonville, I ate out at a few different places. The first of which being breakfast from Einstein’s as you can see above. They call their coffee “Darn Good” for a reason! It really was darn good. Now I know why my grandpa spends many mornings reading the paper at Einstein’s 🙂 I’ll have to join him next time.
One day, we went to Vito’s Italian Cafe where they served buttery garlic rolls while waiting for lunch.

I had the Spinach Salad, which came with roasted red peppers, onions, goat cheese and bacon bits. Balsamic dressing on the side. 
A good road trip almost always involves fast food of some kind. That doesn’t mean you have to be unhealthy either. Chick-Fil-A has great options and I couldn’t pass up my favorite salad. The Southwest Chargrilled Chicken Salad is one meal I will allow meat into.

Around all of these salads, I munched on chocolate chip cookies that I had baked the night before leaving on the trip and some Trader Joe’s Peanut Butter Cup Trax Mix.
I had a great time getting to work out of the office for a couple of days but am so glad to be home.

I Heart Chicken.

This weekend went too quickly for me. How about you?

The hurricane, or lack thereof, came and went, leaving behind this gorgeous sunset on Friday night.

This was the extent of the damage…

And life goes on. On to dinnertime that is! I had already been snacking on these all night, so I wasn’t too hungry. But Greg was. And Greg wanted Mexican. So Greg got….Mexican.
We had been wanting to try a place nearby called Rio Grande, so that’s where we went! By the time we got there, I managed to work up somewhat of an appetite. Frozen strawberry margarita, check. Chips and salsa, check. 
Burritos Deluxe, CHECK! This consists of two burritos, one filled with chicken, one filled with beef. The burritos are topped with red sauce and served with guacamole salad (very original!) and beans or rice. I got beans. Rio Grande was a hit and I will be back. The service was good and the food was better. I couldn’t finish it all, but it makes a great lunch the following day!
On Saturday, I slept in as late as I could…about 8:30ish. Woohoo! Without having many plans for the day, I made myself go to the gym. A three mile jog and a few sets of weight lifting later, I came back home and treated myself to another one of these for breakfast. 
I was feeling crafty, so decided to take a trip to Michael’s. I picked up some fun, random things like a paint brush to finish a painting I started awhile ago and a cute little tin to store/transport some of my baked creations. 
By the time I was done with my errands, lunch was calling my name. Thank goodness for that Chick-Fil-A right across the street. I needed that Southwest Chargrilled Salad stat!
I admit, eating healthfully can get boring at times. And it can be hard not to order a crispy chicken sandwich and the best waffle fries EVER. But, I honestly think I could eat this salad everyday. Ok fine, every OTHER day. 

Only under one condition, though. I must have it with the Berry Balsamic Vinaigrette. This stuff is Uh. May. Zing.

This salad is topped with (somewhat) spicy grilled chicken, corn, black beans, tomatoes, cheese, and carrots. So many flavors and textures and it always fills me up. For only 310 calories including the dressing, you really can’t get much better than that.
I love me some Chick-Fil-A. Maybe not as much as some of my fellow blogger friends :), but I do love it. My mouth was watering the whole car ride home while this salad sat in the passenger seat beside me. I  forced myself to wait until I got home, because I knew I would make a mess in the car otherwise. Somehow, I did it. And it was well worth the wait. 
To sum up the rest of the weekend, let’s just say it included more scones for breakfast (and dessert) and more chicken for dinner. I’m probably going to turn into a scone…or maybe a chicken. A chicken scone? Ew, I hope not.

I thought it was cute, but A) I definitely don’t have the personality to wear something like this in public, and B) Unless ‘Everybody’ means ‘family and a few random friends’ than it hardly applies to me anyway 🙂
