Fries don’t have to be deep fried and covered in grease to taste good. With half the calories of most restaurants’ fries, these baked sweet potato fries are one of the best fast food swaps I can imagine.
Sweet potato fries are definitely more of a Southern thing. I don’t recall ever hearing of them while growing up in the midwest/north/whatever you want to call it. Maybe I was just so picky that I didn’t notice. Either way, better to find out about them late than never!
For less than 200 calories, you can literally eat an entire plateful of these things. And that’s exactly what I did. Add a side of sauteed veggies and you are set.
You do have to have some patience too, because when you are hungry potatoes seem to take especially long to cook. You can’t swing by a drive-through window to pick them up, but it’s sooo worth wait and the very minimal effort. Then again, for the right price, you can drive through my place and I’ll take care of your french fry needs.
I am going to start buying potatoes wayyy more often than I do now.

Sweet Potato Fries
Makes 2-4 servings
2 medium sweet potatoes
2 tablespoons olive oil
1/2 teaspoon paprika
Salt and pepper to taste
1. Preheat oven to 400 degrees.
2. Wash potatoes and slice long-ways to desired thickness. Place in a medium bowl with olive oil and spices. Mix well to evenly distribute ingredients.
3. Place a wire rack on top of baking sheet and spread the fries on top of the rack.
4. Bake for 40-45 minutes, removing half way through to flip fries.
