I’ve heard people say they don’t like doughnuts. Or donuts. I never know how I should spell it. Either way, donuts (I’m going to be lazy and spell it the shorter way this morning) are the perfect and easy way to put a smile on my face.
Let me tell you a story about donuts and me.
Although I love all things sweet and sugary, donuts have a special place in my heart. I remember being a little kid and going to the grocery store with my dad and siblings. The first stop: the bakery. Any samples sitting out were a must. But we usually grabbed a donut while we there too. We would eat the donuts while following my dad around the store. I think this was his tactic to keep us quiet and behaved. Fine with me.
Then, at one point a little later in life, I discovered Krispy Kreme Chocolate Iced Kreme Filled doughnuts (KK spells it the long way so I have to respect that 😉 ). These are heaven on earth. Hands down my favorite donut of all.
This past year while my brother Austin was still with me in Charleston, he was supposed to pick me up from babysitting one night but called to tell me he wasn’t going to make it back in time. “Can’t you just walk?” he asked me. HA! Well I guess I don’t have a choice, do I? Usually I wouldn’t mind. But this was the middle of winter and it was dark and cold. Not fun.
After about a mile walk in the bitter cold, I made it home. A little while later, Austin made it back to my house as well. But he didn’t come empty handed. He walked in with KK Kreme Filled doughnuts and hot chocolate!!! He knows me toooo well. I was so happy and thought it was so nice for him to think of me like that. That was the best.
Now the time has come for me to create donuts for myself! I had never even thought of doing such a thing until I found this! You can BAKE donuts?? Yes!! They don’t have to be fried and extra unhealthy. Isn’t this the best news you’ve heard all day?
The pan has been sitting in my kitchen, just waiting to be used and it was finally given it’s chance to shine.
The ingredient list is fairly simple. The only extra thing I had to buy was buttermilk.
The batter was somewhat difficult to get in the cavities of the tin without making a mess, but I took my time and made do.
I wasn’t expecting them to stay so white, but they were definitely cooked through and ready to come out of the oven within 7-8 minutes…just as the directions said.
I topped them a few different ways. I am way too indecisive to have stuck with one kind.
Powdered sugar, cinnamon sugar, and a buttermilk glaze.
I am going to have to bake donuts again soon. Very soon. It was easy and they turned out so cute! Maybe one day I will even try a cream-filled one….orrrrrr maybe I’ll leave that to the pros at KK.
Baked Buttermilk Cake Donuts
(From the directions on the pan!)
Makes 12 donuts
2 cups cake flour*
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon nutmeg
1 teaspoon salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 tablespoons butter, melted
1 cup powdered sugar
1 tablespoon plus more buttermilk
1. Preheat oven to 425 degrees. Spray donut pan with nonstick cooking spray.
2. In a large bowl, mix flour, sugar, baking powder, nutmeg and salt.
3. Add buttermilk, eggs and butter. Mix until just combined.
4. Fill donut cavities.
5. Bake 7-9 minutes and let cool about 5 minutes before removing from pan.
1. Combine powdered sugar and buttermilk. Add more buttermilk a teaspoon at a time until you reached a desired consistency for glaze.
2. Spread on donut with knife, or dip donut in glaze.
*I didn’t have/couldn’t find cake flour, so used all-purpose flour. From the research I did for substituting this, I found that 1 C minus 2 TBS of all-purpose flour is the equivalent to 1 C of cake flour…so that’s what I did!
(P.S. I also halved the recipe. The pan only makes 6 at a time, which was plenty for two people anyway. But the amounts I have listed are for the full 12-donut recipe)
